Creamy Broccoli, Cauliflower and Cheese Soup

With cooler temps right around the corner and late nights at the soccer field, I knew that I needed to come up with some quick, hearty, healthy and hot meals for my family. In the past, I would make many a meal in the crock pot and it’s something that I plan on continuing to do. I absolutely LOVE my crock pot! It’s been a life saver for many a busy night. Today, I want to share with you a new recipe that I created and tried this past week. It’s an old favorite, tweaked to to sneak in more veggies and is so full of flavor that you’ll totally forget that it’s healthy.
Creamy Broccoli, Cauliflower and Cheese Soup
1/2 head of cauliflower, chopped
6 small heads of broccoli, chopped
6 cups low fat chicken broth
1/2 cup each of diced mushrooms and onions
1 package 1/3 reduced fat cream cheese
4 oz grated cheddar cheese
1/3 cup skim milk
black pepper
salt
flour (optional)
Pour chicken broth into crockpot and then add broccoli, cauliflower, onions, mushrooms and any other vegetables that you have on hand. Heat on low for 4-6 hours. Approximately, one half hour before serving, add cream cheese, milk, cheddar season and black pepper and salt. If you would like to thicken up the soup, slowly add in flour. Serves 6 hearty bowls.
