Dress it Up!

One of my most favorite dishes to make is a good salad. I LOVE salads and eat them all year round and as a meal or along side of a meal. I really enjoy that you can add in all sorts of items….nuts, cheeses, different protein sources and more.
I had never made dressings on my own until I did Ultimate Reset last Spring. It was just too intimidating and honestly, didn’t know if I’d like them because I was so accustomed to just going to the store to buy it. Once I got the hang of how easy, versatile and inexpensive it was, I was hooked.
One of the things that I do is make my own salad dressings/marinades with fresh herbs, olive oil, apple cider vinegar, lemon juice, honey, etc. When making a vinaigrette, a combination of oil and vinegar or lemon juice, there are a few things to keep in mind.
- Keep the oil to vinegar ratio at about 3:1
- If you want a smooth consistency in which the oil and vinegar do not separate you must use an emulsifier like Dijon mustard or egg yolks from pastured chickens.
- Add lots of flavors like onion, garlic, spices, herbs, lemon juice, and honey. Experiment and try new flavors. It’s okay to be creative.
- To keep things simple, use pint-sized jars for easy dump, shake, and serve salad dressing.
Here is one of my FAVORITE salad dressings. This Greek Dressing recipe can actually be used not only on salad but as a marinade too.
Greek Dressing
½ cup extra virgin olive oil
¼ cup red wine vinegar
1 Tbsp. balsamic vinegar
¼ cup fresh lemon juice ‘
2 tsp. dried oregano
1 clove garlic, crushed
1 tsp. Dijon mustard
12 tsp. Himalayan salt
1 tsp. herbal seasoning
2 Tbsp. chopped fresh parsley
Place all ingredients in blender and blend on medium-high for 2 minutes until well mixed. Refrigerate in airtight container. If dressing solidifies when cold, let it sit a room temperature until liquid, then stir. Serves 8.

Yum! I love making my own dressing. When I told my Italian friend what I use, she said it was pretty much a traditional Italian dressing. 🙂 I love salads too, I just love it when someone else makes them for me! 😉
