Happy Cinco de Mayo!
This holiday reminds me of a lot of good times with friends back in the day.
But, when you’re trying to lose weight or live healthier and not everyone else is on board, it can leave you feeling lonely. However, it doesn’t have to be that way. You can still have FUN and lose weight.
Today, I’m sharing with you, five of my favorite Mexican recipes. I’ll be cooking some of these up today as well.

Beef Fajitas
1 warm whole wheat tortilla
3 oz. grilled flank steak cut into strips
1 Tbsp. low-fat grated cheddar cheese
½ cup chopped tomatoes
¼ cup chopped white onion
2 Tbsp. salsa
mixed green salad
1 Tbsp. low-fat ranch dressing
Fill one warm whole wheat tortilla with grilled flank steak cut into strips, low-fat grated cheddar cheese, chopped tomatoes, and chopped white onions. Topped with salsa and served with mixed green salad and low-fat ranch dressing.

398 calories, 32g protein, 41g carbs, 14g fat, 6g fiber

Chicken Fajitas
1 warm whole wheat tortilla
4 oz. grilled sliced chicken breast
2 Tbsp. low-fat grated cheddar
½ cup chopped tomatoes
½ cup shredded lettuce
1 Tbsp. reduced-fat sour cream
2 Tbsp. salsa
green salad
low-fat dressing
Fill a warm whole wheat tortilla (should have about 100 calories, or you may opt for 250-calorie tortillas) with grilled sliced chicken breast, low-fat grated cheddar, chopped tomatoes, and shredded lettuce. Topped with reduced-fat sour cream and salsa. Served with a green salad with low-fat dressing.

Sunrise Quesadilla
1 6-in. whole wheat low-carb tortilla, cut in half
2 oz.chicken sausage, crumbled
½ oz. fontina cheese, sliced thin
½ cup of sliced mushrooms
¼ cup salsa
salt and pepper to taste
Heat a nonstick skillet over medium heat and add the chicken sausage and mushrooms. Cook until sausage is cooked through-about 5 to 8 minutes. Pile the sausage and mushrooms on ½ of the tortilla and top with the cheese; cover with other half of the tortilla. Microwave quesadilla for 20 to 30 seconds and serve with salsa.

Soft Tacos
2 4-inch corn tortillas
3 oz. lean roast beef, sliced
⅓ cup chopped cabbage
⅓ cup sliced bell peppers
¼ cup diced onions
¼ cup pico de gallo
1 dash hot sauce
Warm tortillas in an ungreased frying pan over medium heat, then set aside on a warm plate under a towel to stay warm. In the same pan, heat beef through. Remove from heat and pile beef onto tortillas, then follow with everything else. Squeeze lime wedges over all if desired. Fold, eat, and ole!

Breakfast Quesadilla
1 whole wheat tortilla
2 egg whites
1 Tbsp. pico de gallo or chunky tomato sauce
1 Tbsp. nonfat sour cream
2 1-oz. slices low-fat pepper jack or mozzarella cheese
Cook egg whites with pico de gallo or salsa in microwave for about a minute or until eggs are fully cooked. Place on top of wheat tortilla and add cheese. Microwave for 30 seconds or until cheese is melted. Top with sour cream.
