Hearty Potato and Sausage Soup

Oh my goodness! It’s such a bitterly cold day for many folks. How about a nice cup of soup to warm you up?
This morning, I decided it was just what we needed. I took some of the ingredients that I already had in my kitchen and decided to make a Hearty Potato and Sausage Soup. It will be the perfect dinner for a day like this.
I thought that I would share the recipe with you…
Hearty Potato and Sausage Soup
4 Sweet Italian Turkey Sausage links, sliced
4 medium potatoes, diced (with or without skin is okay)
1-1/2 cups low sodium chicken broth
1 celery rib, sliced
1/4 cup carrots, sliced
1/2 tsp fresh garlic, minced
1/2 tsp onion powder
salt and pepper to taste
1-1/2 cup skim milk
In a large saucepan, brown sausage, drain and set aside. In the same pan, combine the potatoes, broth, celery, carrots and seasonings. Bring to a boil.
Reduce heat and cover for 15 minutes or until the veggies are tender. Add milk and sausage. Cook and stir over low heat until soup is heated through.
Makes 6 servings.
