Homemade Vegetable Beef Soup

Living in the cold and blistery North in the winter can be rough.  We often get snow, ice and freezing rain because of where we’re located which is right below the snow belt of Lake Erie. While it’s extremely beautiful, it does get quite cold.  So, soups, stews and crock pot meals are a staple in our home.

Today, I’m sharing with you my Homemade Vegetable Soup Recipe.  It’s an inexpensive, low-fat, quick, easy, filling and delicious meal that can be served with garlic bread or a salad.

Homemade Vegetable Beef Soup

1 lb lean ground beef, browned

1 bag frozen soup vegetables (okra, corn, potatoes, green beans, etc.)

6 cups low fat beef broth

2 Tbsp tomato paste

 1/2 tsp oregano

1/2 tsp basil

Add all ingredients to pot and simmer for 30 minutes.

Serves 6.
