I’m back from vacation!! I’m not completely rejuvenated due to the cold/flu that I ended up getting while away but I still enjoyed my week off. It never fails, I take a week off and my body seems to want to shut down. My husband’s comment of course was something to the tune of “What’s going to happen to ya when you get old?” Good question!? I guess all I can say is that I’m trying to take care of my body now so that when I do get older, that I don’t have as many complications as what could be. I try to eat right and exercise. Some days are better than others but I keep in mind that this is a lifelong journey and not a quick fix.
This week as well as the next couple of weeks will prove to be a challenge. Summer vacation ends for my girls and then school starts. A few weeks after that, my car pooling days begin. Swim team and dance appear to be the chosen activities. This week, I will be working on putting together some healthy and quick meal plans for during the week. I will also be halfway through my Slim in 6 Challenge. I missed a few days over the past weekend but that’s okay. My body needed to rest. I’m not going to worry about it but keep moving forward.
Since I last weighed in, 2 weeks ago, I’ve gained a total of 5 pounds. I know what I did wrong and now it’s time to fix it. While on vacation, I didn’t stick to my schedule, didn’t wear my BodyBugg and I didn’t log my meals. Those are easy fixes and I need to get back on track. So, that will be my focus this week.
Question for all of you busy parents…..what are some easy, quick and healthy meal ideas that you can share with me? Would love your input.
Our favourite dinner is wheat thins, cold cuts, cheese, cucumber slices, carrots and broccoli. No cooking and all healthy!!
(my kids are 3 & 5 so cheese & crackers night still enthuses them)
It's so hard to keep up with a food journal while on vacation. Don't beat yourself up. Just jump back into the good habits you had before vacation and you'll be on the right track!
Thank you everyone for the suggestions and encouragement!!!!
I love all of the meal and snack ideas. It's always a good thing to talk to others to see what they do differently.
Welcome back from vacation! I think it's great you evaluated what didn't "work" so you can get right back on track. It will be no time before you lose the 5 pounds that came back with you from vacation 🙂 I'm sure you enjoyed it though!
As for easy recipes, I do a lot of crock pot cooking, but one of the quickies is stir frys with a lot of veggies. If you cut the meat the night before, then it saves a ton of time when you need to pull dinner together ASAP.
Have a great week!
I'm the wrong person to ask for recipes. Not sure I'll ever be in that adult cooking category!
I also gained about 4 pounds between vacation and then not getting back on Weight Watchers AFTER vacation, but I think it will fall off quickly for both of us if we get serious again.
Good luck balancing the school and the activities!! Maybe you could bring your running clothes to the practices or whatever and go for a run while the kids practice?
good luck with getting into your new schedule im not a parent but i would suggest keeping a supply of snacks like cheese sticks and fiber or protien bars to take with you for your commute time when your carpooling
I am a new lover of hummus and carrots, I also use it to spread on a piece of wheat bread with a slice of lean turkey for a quick healthy snack! I am glad you are back, I have missed your tweets!!
Glad you're back! I'm sorry to hear you got sick while on vacation. Our body's have a real sense of humor when it comes to telling us that they are tired and need a break! I hope you're feeling 100% again soon!
Welcome back, and good luck with your goals! I know it's SUPER tough to get back on it when you're not feeling your best (especially after the flu – ugh!).
Best wishes getting into a back-to-school routine. I am glad you were able to get some rest but it almost sounds like you needed a vacay from vacay to kick the cold, etc. That always happens to me! Have a great week and welcome back.
Hop right back on that wagon hun! You'll be back to kickin' butt before you know it!
Easy dinner ideas? Well, I <3 Chicken tacos… I typically trim up 5 pounds or so of Chicken Breasts, on Sunday night, and toss it into my food processor {you could cut by hand, but I find it to be a hassle!}…anyways that gives me inexpensive ground chicken which I cook up taco style and store in a ziplock in my fridge during the week… makes taking lunch to work easy and I have dinner if I ever 'dont feel like cooking'
Good luck this week hun!

Hi Laura! Hope you had a nice vacation! Check out this menu from Parents.com http://www.parents.com/recipes/nutrition/parents/healthy-chicken-dinners/
My boys are chicken freaks! But picky. They love the herb chicken recipe and parmesan crusted chicken! Good luck this week with your goals!
