Laura’s Christmas Breakfast Casserole

It wasn’t that long ago but Christmas mornings were a little stressful in our home.  The girls were little and excited about opening their gifts and trying to get them to wait while I was making breakfast did not go over well.  So, I taking a recipe that a friend had given me, I modified it to our liking.  Today, I’m sharing my family’s traditional recipe with you.  I must admit that it’s delicious, it’s quick and it’s easy to make.  The extra benefit is that when my girls wake up, I pop it in the oven and we sit together in our PJ’s as a family and open our gifts.  Once the casserole is cooked, breakfast is served.  I hope that you enjoy it as much as we do.  Merry Christmas!

Laura’s Christmas Breakfast Casserole

Prep Time: 20 Min

Cook Time:1 Hr 30 Min

Ready In: 9 Hrs 50 Min

Yield: 8 servings

Ingredients:

  • 1 pound ground turkey sausage
  • 1 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 2 cups eggbeaters or 4 eggs, beaten
  • 2 cups fat free milk
  • 6 slices whole wheat bread, toasted and cut into cubes
  • 8 ounces low fat mild Cheddar cheese, shredded

optional ingredients which I vary from time to time and from what we have in our fridge: diced bell peppers, chopped broccoli, diced tomatoes, diced onions, diced asparagus, diced mushrooms

Directions:
Crumble sausage into a medium skillet.  Cook over medium heat until evenly brown; drain   In a medium bowl, mix together mustard powder, salt, eggs and milk.  Add the sausage, bread cubes, and cheese, and stir to coat evenly. (If adding optional ingredients, include them in this step.)  Pour into a greased 9×13 inch baking dish.  Cover, and chill in the refrigerator for 8 hours, or overnight.  Preheat oven to 350 degrees F (175 degrees C). Cover, and bake 45 to 60 minutes.  Uncover, and reduce temperature to 325 degrees F (165 degrees C).  Bake for an additional 30 minutes, or until set.
