It’s official that fall has arrived here in Northwest Pennsylvania. With that, my family requests chili a little more often than usual. It’s something that I can whip up real quick, is healthy and helps me stay within our budget. So, I’m sharing my recipe with you. Now keep in mind that even though it says this is a crock-pot recipe, there are times that I’ll do it on my stove top and within 30 minutes. As busy as most of us our these days, that’s an added plus. ENJOY!!
Laura’s Crock-Pot Chili
1 lb. lean ground turkey
½ cup diced tomatoes
½ red onion, diced
2 cloves garlic
1 jalapeno pepper, diced
8 oz. black beans, canned
8 oz. pinto, chili, or kidney beans, canned
1 package Chili Seasoning
2-8 oz cans Tomato Sauce
4 oz. low-fat shredded cheddar cheese
Brown ground turkey and then drain and discard any fat. Place all ingredients except cheese into a slow cooker . Cook for 4 hours on low or 2 hours on high. Top with 1 oz. cheese, diced tomatoes, red onions if desired. Serves 4
