Mixed Fruit Spinach Salad
It’s the New Year and folks are setting goals and resolutions that involve better health. I happen to be doing the same and eating healthier is one of them and eating boring diet food is something I really don’t want to do nor does it motivate me. I like food with flavor so when the subject on salads come up, I can’t help but share the ways I like to make them. I’ve found a way to enjoy them and in a variety of ways. Today I am sharing with you one of my most favorite salad recipes. ENJOY!!!
3 Tbsp. white balsamic vinegar
1 tsp. raw honey
1 Tbsp. finely chopped shallot
1 Tbsp. extra-virgin olive oil
8 cups fresh baby spinach
1 cup sliced and fresh blackberries, strawberries and nectarines
2 Tbsp. crumbled blue cheese 3 slices red onion
¼ cup slivered almonds
1. Combine vinegar, honey, and shallots in a small bowl; whisk to blend.
2. Slowly add oil, whisking continuously, until blended. Set aside.
3. Combine spinach, fruit, cheese, red onions and almonds in a large serving bowl; toss gently to blend.
4. Drizzle salad evenly with dressing; toss gently to blend.
Cals 130, fat 8g, carbs 11g, protein 4g
As you can see, there’s lots of flavor in this meal. If you would like to add a little more protein to your meal, serve along side of a grilled chicken breast. It’s a meal the whole family will love.
