I LOVE finding a good recipe.  And, I want to share several that I have really enjoyed and that have helped me lose weight.  These are family friendly meals that you too, can make in a matter of minutes.  Enjoy!

Classic Veggie Sandwich
2 Tbsp. hummus
2 slices light-style whole wheat bread (toasted if desired)
¼ avocado, mashed
½ cucumber, sliced
1 cup alfalfa sprouts
1 slice low-fat Swiss cheese

Spread hummus on bread. Layer on avocado, cucumber, and sprouts, then top with cheese. Need a protein boost? Add 2-3 oz. sliced turkey breast or 2-3 oz. turkey-style vegetarian slices (deli-style turkey-flavored soy product).

293 calories, 16g fat, 4.5g saturated fat, 27g carbs, 18g protein, 8g fiber

Pita Pizza
In a toaster or oven, bake a 6-inch whole wheat pita topped with ¼ cup marinara sauce, ¼ sliced white mushrooms, ¼ cup sliced white onion, and 1 – ½ oz. grated low-fat mozzarella cheese, until melted. Serve with large mixed green salad drizzled with low-fat salad dressing and sprinkled with 1 tsp. pine nuts.

Lemon Chicken
3 oz. boneless skinless chicken breast marinated in lemon juice and olive oil
1 small sweet baked potato
1 cup mixed steamed broccoli and cauliflower
1 tps. sprinkle shredded parmesan cheese
1 cup sliced strawberries

Marinate a boneless, skinless chicken breast in lemon juice and olive oil. Bake at 375 degrees until cooked through (about 20-25 minutes). Serve with a small baked sweet potato and mixed steamed broccoli and cauliflower, sprinkle with shredded parmesan cheese. For dessert sliced strawberries.
