Slow Cooker Italian Chicken Breast

A few months ago, I had the best meal I think I’ve ever had. It was Chicken Piccata. For days after, I dreamed of this dish because it was SO good. (I know that probably sounds silly but it was that DELICIOUS!) You see, I have had Chicken Piccata before but this particular restaurant served it over a 4 Cheese Risotto. Now normally I don’t enjoy such an indulgence but it was my Birthday and I was most definitely going to enjoy my “flex” meal without any guilt what so ever.
And so, after thinking about it for a while, I decided that I wanted to try making this at home but in a healthy way so that it became more than an occasional treat. I began experimenting with the recipes I found online for Chicken Piccata and made a new dish using some of my favorite ingredients from that meal. Today, I’m sharing with you my quick and easy version of Slow Cooker Italian Chicken Breast that the whole family will enjoy!
Laura’s Slow Cooker Greek Chicken Breast
4 Chicken Breasts, halved
1 c. chicken broth
1/2 c. freshly squeezed lemon or lime juice
3 Tbsp Capers
2 Tbsp minced garlic
pinch Italian spices
salt and pepper to taste
Lay chicken breast in crockpot and then pour in the broth, juice over top. Next, add garlic and then top with capers and Italian spices. Sprinkle with salt and pepper.
Cook on LOW for 4-5 hours.
Serve on top of your favorite pasta, risotto or if you prefer, serve along side of a salad and then ENJOY!
That’s all you need to do to make this quick and easy meal.
