What to do with your Holiday Leftovers

Every year, it’s the same thing. I’ve got leftover Turkey and Ham from our Holiday Dinner. And now, I’ve got to find a way to use it up. What do you do with your Holiday Leftovers?
Years ago, I decided to do something more than just the usual sandwich. Although good, the kids and Bob typically have a sandwich at lunch; they didn’t always want another one for dinner.
At that point, I went out and did a little research on how I could use up my leftovers and make a completely different meal. And, that’s what I still do to this day. I’m going to share some of what I do with you.
Salads: Add together shredded salad leaves, thinly sliced avocado, onion, tomatoes and cucumber, fine slices of cooked ham and turkey breast, sliced hardboiled egg (I always have these at Easter) and crumbled blue cheese for an out of this world salad. Top with your favorite dressing and it’s DELISH!
Pasta: Pair turkey or ham with whole-wheat pasta, quoina or brown rice. Add steamed veggies and then toss with some fresh herbs and Extra Virgin Olive Oil. Sprinkle with a little Parmesan Cheese and it’s YUM!

Leafy stir-fry: Add shredded turkey or diced ham to stir fries, made with shredded Bok Choy leaves, onions and other vegetables and served along side of brown rice.
Chinese turkey: Cook diced turkey with onion, baby corn and bean sprouts. Coat with sweet/sour sauce made from orange juice, soy sauce (Briggs Aminos is even better & healthier) and a little honey, thickened with corn flour.
Soup Make a batch of warming turkey veggie soup or ham and bean soup using stock that you can make from scratch and veggies you have on hand.
Omlets or Scrambles: Fold diced ham and veggies into your next omlet or scrambled egg.
The key is to be creative. You can do so many things with either one of these items. If you have any great ways to use leftover turkey or ham, I’d love for you to share in the comments!

These are great ideas for leftovers. I made a 20+lb. turkey so I have a feeling we will need some alternatives to not get sick of it!
